Broccoli Slaw Salad (Whole 30 approved)


Ingredients

·                2 bags of broccoli slaw 

·                ½ red bell pepper, chopped small

·                1 cup of cashews, chopped

·                1 cup raisins (or dried cranberries if you're not whole30)

·                Handful of chopped green onions

·                Salt/pepper to taste

·               

 Dressing:

·                In a blender combine-

·                ½ c olive oil

·                ⅓ c red wine vinegar

·                2 dates with the pits removed (or a generous squirt of honey if you're not whole30)

Directions

1.      Combine all ingredients in a bowl and top with dressing.

2.      Toss and stir to coat well.

3.      Allow salad to marinate in the refrigerator for 3-5 hours before serving.
