Carrot and Apple Muffins

Yields

12 muffins

Ingredients

1 1/2 cups plain flour/gluten free flour/whole wheat flour (or a mix)

1/4 cup oatmeal, ground

2 Tb flaxseed, ground

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 cup honey (or sweetener of choice)

1 cup carrot, grated

1 medium apple, grated

2/3 cup applesauce

1 egg or 1/3 cup Egg Whites or 1/3 cup extra applesauce

Directions

1.  Preheat oven to 375 F.

2.  In a bowl, mix flour, oatmeal, flaxseed, baking powder, baking soda, and cinnamon.

3.  In another bowl, stir together eggs (or replacement), applesauce, honey, grated carrot and apple. 

4.  Mix the wet ingredients into the dry ingredients, stirring until just combined.

5.  Spoon into muffin tins and bake for around 15-20 minutes, or until a skewer inserted removes clean.
