Pomegranate Guacamole (AIP)

serves 4-6

Ingredients

  • 2 large or 3 small avocados
  • ½ cup pomegranate seeds
  • ¼ cup chopped cilantro
  • ⅛ cup onion, diced
  • 1 tablespoon orange juice (or lime juice)
  • 1 teaspoon minced garlic
  • ¼ teaspoon sea salt

Directions

  1. Mash avocado with a fork in a small bowl.
  2. Add remaining ingredients and stir to combine.
  3. Serve with your favorite chips!
