I cup peas (thawed, if using frozen)
1/2 avocado
4-5 mint leaves
1 Tb extra virgin olive oil
1/2 lemon, juiced
salt and pepper to taste
1. Place all ingredients in a food processor and combine until smooth but chunky.
2. Use as a spread, dip, or pesto on veggies, chips or pasta.
